Lemon Honey Cheesecake Bites

Ingredients:

Base:

  • 200g digestive biscuits or graham crackers, crushed
  • 100g unsalted butter, melted

Filling:

  • 250g cream cheese, softened
  • 100g Streamland Multifloral Mānuka Honey MGO50+ Lemon flavored
  • Zest of 1 lemon
  • 1 tsp vanilla extract
  • 1–2 tbsp lemon juice (optional, for extra tang)

Decoration (Optional): Edible flowers, crushed pistachios, or a drizzle of extra honey

Instructions:

  1. Prepare the crust: Combine crushed biscuits and melted butter. Press into the base of tartlet pans or a square tin lined with baking paper. Chill in the fridge for 20–30 minutes to set.

  2. Make the filling: In a bowl, beat softened cream cheese with lemon Mānuka honey, lemon zest, vanilla, and lemon juice (if using) until smooth and creamy.

  3. Assemble: Spoon the filling into the chilled bases and smooth the tops.

  4. Chill for at least 2 hours or overnight until set.

  5. Decorate with edible flowers, crushed pistachios, or a light honey drizzle.

  6. Serve cold with tea or coffee.
