Instructions:
Prepare the crust: Combine crushed biscuits and melted butter. Press into the base of tartlet pans or a square tin lined with baking paper. Chill in the fridge for 20–30 minutes to set.
Make the filling: In a bowl, beat softened cream cheese with lemon Mānuka honey, lemon zest, vanilla, and lemon juice (if using) until smooth and creamy.
Assemble: Spoon the filling into the chilled bases and smooth the tops.
Chill for at least 2 hours or overnight until set.
Decorate with edible flowers, crushed pistachios, or a light honey drizzle.
