Lemon Honey Cheesecake Bites

INGREDIENTS

  • 200g digestive biscuits, crushed
  • 100g butter, melted
  • 250g cream cheese, softened
  • 100g Streamland Multifloral Manuka Honey MGO50+ lemon flavored
  • 1 tsp vanilla extract
  • Zest of 1 lemon
  • Fresh berries (for topping)

Instructions:

  1. Mix crushed biscuits with melted butter. Press into mini muffin tins to form bases.
  2. In a bowl, beat cream cheese, Honey, vanilla extract, and lemon zest until smooth.
  3. Spoon mixture over biscuit bases.
  4. Refrigerate for at least 2 hours.
  5. Top with fresh berries before serving.
